Rosemary Frittata

6 large eggs
¼ cup skim milk
1 t. salt
1 shallot, chopped
1/3 cup frozen chopped spinach
2 T. OLIVE MILL Rosemary olive oil
4 oz. turkey breast
½ cup sharp cheddar cheese
¼ cup parmesan cheese, grated
Rosemary for garnish

Turn on broil raising rack high in oven.  Heat a 12” cast iron skillet over medium.  While pan is heating, mix eggs, milk and salt together, whisking well.  Add 1 T. oil to pan and heat, add shallots and cook until soft.  Add spinach and turkey, stir well to break up spinach and heat turkey.  Remove from pan.  Place another tablespoon of oil.  When headed, add egg mixture, then add meat mixture and stir.  Add cheese on top to cover and cook 5 minutes.  Place under broiler for 5 minutes until brown.  Flip pan onto a plate, garnish and serve.
