Pistachio Crusted Salmon

2 5 oz. salmon fillets
1/3 cup pistachios
1/8 t. cayenne pepper
2 T. cilantro
OLIVE MILL Pistachio oil

Preheat oven to 350.  Pour oil into skillet and place in oven while preparing fish.  Place pistachios, pepper and cilantro in food processor, pulse until nuts are chopped.  Pour mixture into dish.  Wash the fillets and pat dry.  Mist lightly with oil.  Press fillets into pesto mixture on both sides.  Place in preheated skillet.  Bake 15-20 minutes until fish flakes easily.
