Grilled Vegetable and Cheese Sandwich

½ cup OLIVE MILL Rosemary oil
1/3 cup OLIVE MILL Traditional Balsamic + drizzling
1 t. chopped fresh rosemary
6 cloves garlic, crushed
1 red onion, sliced thick
1 eggplant, peeled and sliced
1 portabella mushrooms
1 red pepper, seeded and cut into strips
8 slices swiss cheese
4 fresh Portuguese rolls
1 large tomato, sliced
8 basil leaves

Mix first 8 ingredients in large gallon size bag.  Marinade for 1-4 hours. Grill veggies until browned about 20 minutes.  Remove skins from pepper, slice mushroom and pepper into slices.   Broil roll (opened) until brown.  Place vegetables and slice of cheese on rolls and drizzle with additional balsamic if desired.
