Smokey Onion Biscuit Squares

1 small onion, chopped
2 T. OLIVE MILL Onion oil
¼ t. sugar
1 garlic clove, minced
1 ½ cup biscuit/baking mix
½ cup 2% milk
1 egg
¾ lg. smoked mozzarella cheese, shredded, divided
1 t. chipotle seasoning mix

In a small skillet, cook onion in oil under tender, add sugar, cook 10-15 minutes longer.  Add garlic; cook for 1 minute.  Cool.  In a small bowl, combine the biscuit mix, milk and egg.  Fold in half of the cheese and chipotle seasoning.  Transfer to greased 8x8 pan.  Sprinkle with remaining cheese.  Bake at 400 for 18-22 minutes.  Cut into squares and serve warm.
